Heres a really nice summer salad.

Directions

  1. Peel 2 of the cucumbers.
  2. Slice all 4 cucumbers thin and place in a large bowl.
  3. Lightly salt and let stand for 1 hour.
  4. In a small bowl mix together the minced garlic, yogurt, lemon juice, dill, and pepper.
  5. Mix well.
  6. Whisk in the olive oil until well incorporated.
  7. Drain Cucumbers and place in a salad bowl.
  8. Pour on the salad dressing and toss gently.
  9. Chill for 1 hour, lightly toss again and serve.

The combination of yogurt, olive oil and lemon juice was a nice dressing. Great salad for a warm summer day.

This was refreshing and perfect with my Turkish Chicken Thighs! I forgot the olive oil, but it was very good any way. I'll be making this again soon with all of the cucumbers I've been getting from the farmer's market!
