My sister gave me a slightly different version of this recipe- it called for hot salsa and a tablespoon of lime juice. My kids find it too spicy with the hot salsa, and the lime salsa saves the lime juice step. This makes its own delicious sauce.

This was a different type of meal to make in a crock pot and very good. I added a little more lime and also about 1/4 cup of coconut at the end of the cooking time. The chicken was so tender it fell apart. I put this over Jasmine rice. Very good!!!
- 4 -6 boneless skinless chicken breast halves
- 1 jar of garlic/lime salsa
- 1⁄4 cup smooth peanut butter
- 1 tablespoon soy sauce
