Crock Pot Breakfast Casserole

- 453.59 g hash browns, frozen
- 226.79 g bacon, cooked and crumbled
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 177.44 ml cheddar cheese, shredded
- 6 eggs
- 118.29 ml milk
- 2.46 ml salt
- 2.46 ml pepper
directions
- Place a layer of frozen hash browns on the bottom of the crock pot, followed by a layer of bacon, then onions, bell pepper and cheese.
- Repeat the layering process two more times, ending with a layer of cheese.
- Beat the eggs, milk, salt and pepper together.
- Pour over the crock pot mixture.
- Cover and cook on low 8-10 hours. Note based on harsh review: If you know your slow cooker runs hot, reduce the time accordingly. I have made this many times at the stated time with great results - best between 8-9 hours, well done at 10, but not burnt.

Browsing the reviews tonight I came across this recipe. I've not made, nor will I probably ever. BUT the thing is crock pots. I have a love/hate relationship with them. The older, smaller ones don't get as hot as the bigger, newer ones do, and there is no set of instructions to to work this out. They all say crock pot, and they are, but they are not created equal. It is for this reason I wouldn't attempt this recipe that has eggs as a main ingredient. So, be kind to the chef as this may very well work for THEIR crock put, but be a disaster in yours.

I was born in Chicago, IL and have lived in the area all my life. I love to cook and plan meals and always have. As a child I would watch Julia Childs on TV every day (she came on right after Mr. Rogers) and I have been interested in cooking ever since. Now that I have a family I enjoy the quick and easy recipes just as much as the more intricate ones. I didn't mind putting in the extra time and effort when I only cooked recreationally. I still like to do that sometimes, but for the day-to-day chore of cooking (and sometimes it is a chore) I like the option of fast and simple.
I enjoy trying new recipes and sharing favorites of mine. I have found that sometimes the most unlikely sounding ones turn out to be the best! I try to always review the recipes I try because I know how much I enjoy getting that feedback myself. Even when it is not necessarily positive because sometimes suggestions help me tweak things and make them better!
