Serve warm as a side dish or over rice.
- 2 tablespoons butter
- 1 large onion
- 1 lb small okra pods, caps trimmed
- 1 tablespoon water
- 2 firm tomatoes, cut into wedges
- 1 teaspoon brown sugar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- In a large skillet, heat butter and sauté onion and okra. Cook about 5 minutes. Add 1 to 2 tablespoons water if mixture is dry or sticky.
- Add tomatoes, sugar, salt and pepper. Stir to combine. Cover and cook over low heat just until tomatoes are heated through, about 1 minute.
