Creamy Watermelon Soup

ingredients
- 1 1⁄2 cups seedless watermelon, diced
- 1⁄2 teaspoon vanilla
- 1⁄2 teaspoon berry sugar
- 3 -4 teaspoons nonfat sour cream or 3 -4 teaspoons non-fat vanilla yogurt
- 3 mint leaves
directions
- Puree watermelon in a blender until smooth.
- Add vanilla, sugar, and 3/4 of the sour cream/yogurt; blend well.
- Chill overnight.
- Garnish with remaining sour cream/yogurt and mint leaves.
- Enjoy!

5 star - WOW! This recipe was really good and exceeded my expectations. I made no or little changes to the recipe and will definitely make it again.
