  • Steam the fish for 15 minutes or until cooked.
  • Flake into a saucepan and stir in the egg yolks.
  • Mix in the white sauce.
  • Leave to cool.
  • Fold in the egg whites.
  • Place in a baking dish and cover with breadcrumbs.
  • Cook at 170c for 30 minutes or until the breadcrumbs have browned.
