Alan loves any kind of cranberry salad. I make this for Christmas Eve.
- 4 cups fresh cranberries
- 2 cups sugar
- 20 ounces crushed pineapple, undrained
- 1⁄2 cup pecans
- 1 cup heavy cream, whipped
- 1 cup miniature marshmallow
- Grind cranberries in food processor.
- Mix cranberries and sugar and let stand for 2 hours.
- Add pineapple and pecans. Mix well.
- Fold in whipped cream and marshmallows.
- Let stand overnight before serving.
