- 1 (15 ounce) can black-eyed peas (rinsed)
- 1⁄2 cup thinly sliced green onion (2)
- 1⁄4 cup diced sweet red pepper
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons cider vinegar
- 2 fresh jalapeno peppers, seeded and chopped
- 1⁄4 teaspoon black pepper
- salt
- tortilla chips
directions
- Combine all ingredients and chill over night.

When making this dip, I did use just one rather small jalapeno & then added a seeded & diced Romano tomato! Served it with the indicated tortilla chips & also some of the large & sturdy corn chips (I like the latter), & it was a big hit! Thanks for sharing a great recipe! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
