Couscous Tabouli With Salmon

- 1 lb salmon fillet
- 1 cup couscous (I use whole wheat)
- 1 cup water
- salt
- pepper, fresh cracked
- 1⁄4 cup extra virgin olive oil
- 1⁄4 cup fresh lemon juice (approx. two lemons)
- 1 cup fresh parsley, minced
- 2 medium tomatoes, diced small
- 1 medium red onion, diced small (optional)
directions
- Season the salmon fillets with a little salt and pepper.
- Spray a hot saute pan with cooking spray and place the fillets in the pan.
- Saute salmon on both sides until nicely browned and flaky. Remove and set aside.
- Boil 1 cup of water with approximately 1 teaspoon of salt.
- Once boiling, stir in the couscous, cover, and remove from the heat for 5 minutes.
- Add the couscous, salmon, chopped tomato, parsley, onion (if using), oil, and lemon to a large bowl.
- Toss lightly to combine and add salt and pepper to taste.
- NOTE: Additional lemon and/or olive oil may be added if you prefer a wetter tabouli. I usually add extra lemon because I love it!
