  • 2 medium zucchini
  • 12 lb pork sausage (or more, if desired)
  • 14 cup chopped onion
  • 1 (8 ounce) package corn muffin mix (I use Jiffy)
  • 12 cup shredded cheddar cheese

  • Coarsely shredd 1/3 cup zucchini, set aside.
  • Cut remaining zucchini into 1/4 inch slices.
  • Brown sausage, breaking up into crumbles. Remove and set aside.
  • Cook zucchini and onion in drippings until onion is translucent.
  • In a greased quiche pan, or equivalent pan, arrange cooked zucchini rounds in concentric circles.
  • Prepare cornbread mix according to directions, stir in shredded zucchini, cooked sausage and cheese.
  • Spread mixture over zucchini rounds in pan.
  • Bake 350ºF for 25-30 minutes, Invert onto a serving platter. Serve with hot sauce or pepper flakes, if desired.
