  • Heat oil in large skillet.
  • Brown chicken pieces lightly and place in large pot.
  • Add to skillet and brown lightly, smoked meat, scallions, carrot and garlic.
  • Add flour, parsley flakes, majoram, bay leaf, salt, pepper, and wine and bring to a simmer.
  • Pour over chicken.
  • The chicken should be covered.
  • Simmer over low heat for 1 hour.
  • Add mushrooms during last 5 minutes.
  • Your house will smell great.
  • Serve with rice.
