A delightful summer fruit and vegetable salad with cottage cheese.

  1. Wash and dry all the fruits and vegetables and divide equally into four portions.
  2. Tear the lettuce leaves roughly.
  3. Mix together the dressing ingredients.
  4. Toss the lettuce leaves with some of the dressing.
  5. Divide the lettuce onto four plates and arrange the rest of the ingredients over the lettuce.
  6. Place the cottage cheese in the centre of each plate.
  7. Pour any remaining dressing over the salad and serve.
