- 2 (1/4 ounce) envelopes unflavored gelatin
- 1⁄2 cup cold coffee (or Kahlua)
- 3 cups hot coffee
- 1⁄4 cup sugar (or up to 3/4 cup according to desired sweetness)
- 1 pinch salt
directions
- In a large bowl combine gelatin and cold coffee.
- Allow to sit 10 minutes to soften.
- Add hot coffee, sugar and salt; stir until the sugar is completely dissolved and mixture is clear.
- Pour into individual serving dishes and chill till set.
- Serve with sweetened whipped cream.

OMG, this recipe should come with a warning that it's addictive. Worthy of 10 stars and incredibly simple to prepare. I really wasn't sure if I'd like it or not, but I LOVE IT!!! Simply amazing. I used decaf coffee since I was serving it in the evening, and also used half sugar and half stevia. I think it would be good using all stevia or some other sugar substitute. I can't imagine making this without the Kahlua, that was the perfect ingredient. I served the jello in martini glasses, and topped it with Cheeky Panda's Kahlua Whipped Cream (Recipe #427453) and sprinkled a few mini chocolate chips on top. An elegant looking dessert that wowed everyone. Simple Divine!

I am not a big fan of jello but I love coffee so decided to try this one! I made one batch with very strong regular coffee and the second batch with homemade Kahlua. Both were incredible! I loved the Kahlua one quite a bit better though. (I wonder why!) With some sweetened whipped cream and a drizzle of caramel I was grinning over this fun dessert! Next time I will be trying a bit of chocolate sauce over it.
