Coeur D'alene Pumpkin Pie

"This is the pumpkin pie my mom has always made. I think she got the recipe out of the newspaper or something many years ago. The filling is closer to a pumpkin custard than a traditional pumpkin pie filling. Coeur d'Alene is a city in Northern Idaho, by the way ;)"

  • Beat eggs and sugar.
  • Add remaining ingredients (pumpkin and milk last) and blend.
  • Pour into 9" pastry-lined pan and bake at 450* for 10 minutes.
  • Meanwhile, melt 2 T butter and mix with 1 T brown sugar. After first 10 minutes of baking, pour mixture over pie, and continue baking at 350* for another 40 minutes.
