Crust
- 3⁄4 cup flour, plus
- 2 tablespoons flour
- 6 tablespoons cold butter, cut into bits
- 1⁄3 cup sweetened flaked coconut, toasted and cooled
- 1⁄4 cup confectioners' sugar
- 1⁄4 teaspoon salt

Filling
- 4 large eggs
- 1 cup sugar
- 1⁄3 cup flour
- 1⁄2 cup fresh lime juice, plus
- 2 tablespoons fresh lime juice
- 1 tablespoon freshly grated lime zest

Garnish
- 1⁄3 cup sweetened flaked coconut, toasted and cooled
directions
- For crust: Preheat oven to 325F.
- Butter and flour an 8-inch square baking pan, knocking out excess flour.
- Blend together with fingertips flour, butter, coconut, confectioners’ sugar and salt until mixture resembles coarse meal.
- Pat mixture into prepared pan and bake in middle of oven 25-30 minutes, or until golden-brown.
- Reduce oven temperature to 300F.
- Make filling: Whisk together eggs and sugar until combined well and stir in flour, lime juice and zest.
- Pour filling mixture over crust and bake in middle of oven for 20 minutes.
- Top custard with coconut garnish and bake 5-10 minutes longer, or until just set.
- Cool on rack and chill 1 hour.
- Cut into 16, 2-inch squares.

As the description says, these are great tasting! Actually they're awesome. I made them gluten free using cornflour and cornstarch for the crust and rice flour and cornstarch for the custard. Worked like a spell. There don't seem to be sweetened coconut flakes available in Germany, at least I've never seen them, so I used unsweetened, and it was still plenty sweet. Love the lime flavour. I used 2 8x4 inch pans and layered them with nonstick paper so I could easily lift the bars out of the pans. Thanks for sharing this yummy recipe!Â

These are great and I'm pretty sure that even super picky DH is going to like them. I had everything on hand and really couldn't be happier with the bars. They have a nice sunny color so they are pretty and the ingredients are things that we like so how could this not be a hit! I took a tip from awalde and used my springform pan. It released well and a couple of the smaller pieces made ideal tasting samples. So good. Made for Culinary Quest 2014.Â

Oh Ev, this is so delicious.<br/>I did not have a 9 inch square mold so I used a round 10 inch one (Springform) and the quantity was perfect.<br/>To cut into square I found the pizza cutter the best.<br/>We all loved it very much and we saved a few pieces for a present,<br/>My family was very happy I prepared this, as they knew you are chef even more.<br/>Hugs from us all!<br/>Made for Culinary Quest 2014.Â

I made these with lemons instead of limes because thats what I had on hand. I also was out of powdered sugar so I used regular sugar in the crust instead. They were great despite the changes and my boyfriend gushed about them for a week! I loved the taste of the coconut in the crust but next time I may try leaving it off the top and going for a dusting of powdered sugar instead. I'm going to be making them for a dinner party this week so I will get a chance to try them with lime...looking forward to it!Â

Great Bars Ev! I made the crust on the food processor and used bottled lime juice in place of fresh, as I did not have anymore fresh limes, I am going to make this again next time with fresh lime juice! I also added in a couple drops of green food colouring, the filling baked out beautifully, nice and fluffy! thanks for sharing!...Kitten:)Â

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
