  • 12 cup cashew butter with cardamom
  • 2 tablespoons shredded coconut
  • zest from 1 lemon
  • 12 fresh lemon, juiced
  • 1 tablespoon honey
  • shredded coconut (to garnish)

  • Add all the ingredients to a bowl and stir until combined.
  • Roll into 6 balls and roll the balls in shredded coconut.
  • Store in the fridge.
  • covered, for up to 1 week.
  • Yield 6 energy bites.
