A very nice and light cookie. Sugar can be cut down if it's too sweet.

Directions

  1. Preheat oven to 350°F.
  2. Lightly grease cookie sheets or line with parchment paper.
  3. Whip egg whites to soft peaks.
  4. Add sugar and beat to stiff peaks.
  5. Combine almonds, cocoa, cinnamon, fold into egg whites.
  6. Drop by the spoonful on to cookie sheets about 2" apart.
  7. Bake 10-12 minutes or until lightly browned.
  8. Transfer to wire racks to cool.
