Coca-a-Cola Cake

"I've been making this cake for My Father-in-Law for years. Nobody in the family really doesn't know what it taste like because he hides and eats the cake for Himself. This is a rich Chocolate Cake, You might need some ice cream with it."

• Serves: 6-8

ingredients

• Cake Mix

• 1 cup butter, softened
• 2 cups all-purpose flour
• 1 3⁄4 cups sugar
• 3 tablespoons hershey cocoa
• 1 teaspoon baking soda
• 1 teaspoon vanilla flavoring
• 2 eggs
• 1⁄2 cup buttermilk
• 1 cup Coca-Cola
• 1 1⁄2 cups mini marshmallows

• Coca Cola Icing

• 1⁄2 cup melted butter
• 3 tablespoons hershey cocoa
• 1 box confectioners' sugar
• 1⁄3 cup Coca-Cola
• 1 cup pecans or 1 cup favorite nuts (optional)

directions

1. In a medium bowl sift Flour, Cocoa, Sugar, Baking Soda.
2. In a Large bowl mix together Butter, Vanilla, Eggs, Buttermilk and Coke.
3. With any kinda mixer, Blend on low speed, Slowly add the dry ingredients to the wet.
4. Mix well, Add mini marshmallow's and stir by hand once or twice.
5. Pour Batter into a greased 13 X 9 pan or larger.
6. Bake at 350 for 35 min.
7. or until toothpick comes out clean.
8. Cool for 15-30 min.
9. Icing: Combine melted butter, cocoa, coke and the whole box of powder sugar.
10. Beat until smooth, the stir in nuts (optional).
11. Spread on Cake.
12. It should be kept in the refrigerator.

This is an Excellent cake! I melted the marshmallows with the butter and coke first to do away with the individual marshmallows. Thanks for sharing this great recipe!

My family really enjoyed this cake after our Thanksgiving dinner. It has a really nice flavor and I couldn't imagine using any other beverage other than coke for a coca cola cake. I will be making this often in my household. Thanks for a great recipe.

Looking at the ingredients, and being a chocoholic, I I was looking forward to a "Rocky Road" flavored cake. I used Pepsi instead of Coke and Pecans and it seemed to turn out ok althoug the 3 T. cocoa for a 9x13 inch cake hardly gave it enough chocolate flavor.
