Citrus-Ginger Ice (Granita)

- 3 1⁄2 cups water
- 1 1⁄2 cups Splenda granular or 1 1/2 cups sugar
- 1⁄8 cup gingerroot, peeled and minced
- 2 teaspoons orange rind, grated
- 1⁄3 cup orange juice
- 2 tablespoons lemon juice
directions
- Combine water, Splenda/sugar, gingerroot, and orange rind in medium sucepan. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Reduce heat and simmer 7 to 10 minutes.
- Cool to room temperature.
- Strain through sieve to remove ginger pieces. Stir in orange juice and lemon juice.
- Pour into a large freezer proof container, and put into the freezer.
- Every 15 minutes, for 2 hours, take out of the freezer and mix it up.
- Then scrape with fork 30 minutes during the third hour until the granita appears grainy and the crystals have been broken down. It should resemble snow or coarse sand.
