  • Preheat oven to 350 degrees.
  • Mix together the eggs, vanilla, apple cider, and oil.
  • Combine the dry ingredients.
  • Mix the cider mixture with the dry ingredients. Add the sliced apples. Add walnuts (optional, if desired).
  • Pour the batter into a greased bundt pan. Bake for 50 minutes, or until toothpick comes out clean.
  • For the glaze, mix the powdered sugar, brown sugar, cinnamon, and vanilla. Add in a few drops of cider and mix until it forms a pourable glaze.
  • Refrigerate before serving.

  1. This cake is amazing. I added some nutmeg in addition to the cinnamon which was certainly the right call. The bake time was a bit off. I used a silicone bundt pan though, so took the temp down to 325 and added roughly 15 min to the bake. So it wouldn't over brown I used foil on top for the last 20 minutes. I also shredded the apples with a box grater. It was so incredibly moist and dense (in a good way). I would certainly make this again for any occasion.
