Cake
- 3 cups flour
- 2 cups brown sugar
- 3 eggs
- 1 cup apple cider
- 1⁄2 cup oil
- 1⁄4 cup applesauce
- 1 tablespoon vanilla
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 3 1⁄2 teaspoons cinnamon
- 1 1⁄2 teaspoons nutmeg
- 3 apples (peeled and sliced)
- 1 cup walnuts (optional)

Glaze
- 3⁄4 cup powdered sugar
- 3⁄4 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- apple cider (to desired thickness)
directions
- Preheat oven to 350 degrees.
- Mix together the eggs, vanilla, apple cider, and oil.
- Combine the dry ingredients.
- Mix the cider mixture with the dry ingredients. Add the sliced apples. Add walnuts (optional, if desired).
- Pour the batter into a greased bundt pan. Bake for 50 minutes, or until toothpick comes out clean.
- For the glaze, mix the powdered sugar, brown sugar, cinnamon, and vanilla. Add in a few drops of cider and mix until it forms a pourable glaze.
- Refrigerate before serving.

This cake is amazing. I added some nutmeg in addition to the cinnamon which was certainly the right call. The bake time was a bit off. I used a silicone bundt pan though, so took the temp down to 325 and added roughly 15 min to the bake. So it wouldn't over brown I used foil on top for the last 20 minutes. I also shredded the apples with a box grater. It was so incredibly moist and dense (in a good way). I would certainly make this again for any occasion.
