Chris' Awesomely Easy Ice Cream Dessert

- 1⁄2 gallon vanilla ice cream, softened
- 1 (6 ounce) package dry vanilla instant pudding mix
- 1⁄2 cup milk
- 60 ritz-type crackers (that's approx. 2 stacks)
- 8 tablespoons margarine
- 1⁄4 cup sugar
- 1 (8 ounce) container whipped topping, thawed
directions
- In large bowl, using electric mixer, combine softened ice cream, milk, and sprinkle in the dry instant pudding mix (NEVER use cooked pudding mix, only instant!).
- Place mixture in refridgerator while preparing crust.
- Crush crackers into a 9x13 pan, add sugar, and pour melted margarine over all.
- Mix well and spread into crust at the bottom of the pan.
- Spread ice cream mixture over the crust and top with the whipped topping.
- Refridgerate at least 2 hours before serving.

This is a fabulous, quick and easy dessert to throw together. I think next time I might try a different flavor of pudding or ice cream (I used low-fat frozen yogurt), just for something different. Would also be great with some fruit added in... perhaps between the ice cream layer and cool whip layer. Either way, it's a keeper!

This was excellent! It really is simple to make, just like you said. I've already made it twice, and my friends went crazy for this at a recent game night where we all bring munchies- I should have made two, because I only got the scrapings out of the pan! But I made it the next day just for me...and, wow! A keeper.

As you can see, I live in Tennessee, and although I love it, I'll always be a Yankee! My hometown is Latrobe, PA....and that's where I learned to appreciate good cooking! My maternal Grandma was Italian, and she was the best cook EVER. Family dinners were absolutely ASTOUNDING at the amount and variety of food she would create. Sadly, as a child I was so picky I wouldn't even TRY half of what they put in front of me....once I grew up, I only had a few years of experimenting, and then Grandma died. If only I'd been smarter as a child- I missed out on so much excellent cooking! Since then, I scour thru all her old cookbooks and try to make up for whatever I may have missed...But most of her recipes are handwritten and the amounts listed are dubious, or sometimes missing altogether. My grandma was a wonderful cook, but LOUSY at recording her tricks of the trade!
