- 1⁄2 cup reduced-fat mayonnaise
- 1⁄2 cup crumbled blue cheese
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon lemon rind
- 1⁄8 teaspoon red pepper
- 2 1⁄2 cups finely chopped romaine lettuce
- 1 1⁄2 cups finely chopped celery
- 3⁄4 cup finely chopped deli turkey
- 1⁄2 cup finely chopped salami
- 1⁄2 cup finely chopped deli ham
- 1⁄2 cup finely chopped carrot
- 1⁄3 cup finely chopped radish
- 2 tablespoons finely chopped fresh parsley
- 1 (15 1/2 ounce) can chickpeas, rinsed and drained
directions
- Combine mayonnaise, blue cheese, vinegar, lemon juice, lemon rind, and red pepper in a small bowl.
- Combine lettuce, celery, turkey, salami, ham, carrots, radishes, parsley and chickpeas in a large bowl.
- Top with dressing and serve.
