My mother got this recipe from a restaurant she worked at in Springfield, Vermont. She now makes it at her grandsons' request!
- 1⁄4 cup butter or 1⁄4 cup margarine
- 1⁄4 cup cornstarch
- 3⁄4 cup sugar
- 2 1⁄2 cups milk
- 1 teaspoon vanilla
- 1⁄4 cup cocoa
- 4 egg yolks
- 1 dash salt
- baked pie shell
- Melt the butter in a saucepan.
- Whisk in the cornstarch.
- Add the remaining ingredients and heat on low until thickened.
- Pour into the pie shell.
- Cool to room temperature or refrigerate before serving.
Great chocolate filling. Very smooth and flavorfull. Usually I use flour, but the cornstarch seems to result in a more creamer texture. I did add more chocolate cocoa just because I like a deeper chocolate taste.
I made this for the first time and loved it! My kids loved it as well... and that's what matters to me. Thanks for the recipe!
I just made this for my kids.It was so simple and the taste is great
