  • Preheat oven to 400°F and line a muffin pan with paper cups.
  • In two separate bowls mix the wet ingredients and the dry (minus the chocolate chips and walnut pieces).
  • Combine the wet and dry ingredients just until you can no longer see any flour. Gently fold in the chocolate chips and walnut pieces.
  • Spoon batter into prepared cups filling 2/3 full.
  • Bake for 20-25 minutes, until toothpick comes out clean.
