Chocolate Chip Pumpkin Bread

ingredients
- 1 cup walnut flour
- 1 cup powdered soy protein concentrate
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1⁄4 cup unrefined sugar
- 1⁄2 cup walnuts, chopped
- 1 cup bittersweet chocolate
- 15 ounces pumpkin (2 cups)
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 tablespoons unsalted butter (melted)
directions
- Preheat the oven to 350 (325 for a glass pan). Lightly grease a regular sized loaf pan.
- Place all the dry ingredients together and mix well. Stir in the chocolate chips and nuts.
- In a separate bowl, mix all the wet ingredients (I add the butter to the pumpkin first, and add the eggs after, so the eggs don't cook).
- Add the pumpkin mixture to the dry ingredients. Mix until thoroughly blended.
- Pour into pan, shaping it so that it is mounded in the center. Bake for 45 minutes to an hour.
- Cool before eating! (I rarely let it cool. It tastes too good hot!).

Well I was not sure if I should rate with stars because I did make some changes. I could not find walnut flour so used regular. I also did not use the soy and used dry milk powder. But because it turned out so well I decided some might want these changes also. It was delicious! I used semi-sweet chocolate chips. Thanks Abi Q

I am also making forays into Russian cooking. <br /> <br />I am on a low carbohydrate diet for various and sundry health reasons. It's a lot of fun tweaking recipes to be low carb enough for me to enjoy. I've become a much better cook because of it. <br /> <br />I love sewing, embroidery, cooking, baking, and dancing. I just got a full time job again so I am relearning how to fit my cooking in around a strict schedule. The crock pot is once again my best friend.</p>
