Sugar-free version of Ruth's Hemp Foods recipe. My husband likes to use as a dip for apple slices. I process the chia seeds first in my coffee grinder - it gives the pudding a smoother texture.

  1. Whir all ingredients in a blender for a couple of minutes.

I wanted to like this pudding so much. But the taste is not what I expected. I don't like the texture. It's not thick like a pudding. Maybe it would be better to mix it with a mixer instead of the blender. Thanks Kiskadee :) Made for PAC Spring 2012
