Sugar-free version of Ruth's Hemp Foods recipe. My husband likes to use as a dip for apple slices. I process the chia seeds first in my coffee grinder - it gives the pudding a smoother texture.
- 6 tablespoons chia seeds
- 2 cups 1% low-fat milk
- 1⁄4 cup almond butter
- 1⁄4 cup cocoa
- 2 tablespoons Splenda sugar substitute
- 1⁄2 teaspoon vanilla
- 1 pinch salt
- Whir all ingredients in a blender for a couple of minutes.
I wanted to like this pudding so much. But the taste is not what I expected. I don't like the texture. It's not thick like a pudding. Maybe it would be better to mix it with a mixer instead of the blender. Thanks Kiskadee :) Made for PAC Spring 2012
Made this specifically to use as a dip for fruit, & it was wonderful! It was taken to a neighborhood potluck & most everyone enjoyed it very much! Thanks for sharing it! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
