- 250 g plain sweet biscuits, crushed
- 3 cups coconut
- 1 cup crystallized ginger, chopped
- 100 g butter, chopped
- 350 g dark chocolate
- 1 cup condensed milk
directions
- Mix crushed biscuits, 3/4 cup of coconut and ginger in a large bowl.
- Over medium heat, melt butter and condensed milk until smooth and pour over dry mixture. Melt chocolate and mix through.
- Roll mix into small balls and roll in coconut and refrigerate until firm.
