  • Heat oven to 190°C.
  • Bring a pan of water to the boil and cook the peppers for 5 mins, remove and drain.
  • Heat 1 tbsp of the oil and cook onion until tender. Add cumin, chilli and cook for another 3 minutes Add courgette and cook for a further 2 minutes.
  • Remove from heat and stir in sweetcorn, cheese, coriander and seasoning.
  • Stuff peppers with mixture and bake for 35 minutes, peppers should be very soft.
  • Serve with sour cream and corn chips.

How I rate... 5 stars - perfect, will make again without any changes. 4 stars - Liked it, will make again again but with changes. 3 stars - had to make major changes but got it to work. 2 stars - had to make major changes and it didn't work. 1 star - went terribly, a waste of time and ingredients, I cried, BF cried the cats cried you get the picture...
