- 1⁄4 cup olive oil
- 1 garlic clove, chopped
- 1 onion, sliced into rings
- 1 green pepper, seeded and cut into strips
- 1 red pepper, seeded and cut into strips
- 1 pinch saffron
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 pinch cayenne
- 2 cups smoked ham, diced (serrano)
- 1 tablespoon tomato paste
- 1 1⁄2 cups tomato sauce
directions
- Saute the garlic in the olive oil for 10 minutes.
- Add the onion and peppers; saute until tender.
- Add the remaining ingredients and bring to a boil.
- Reduce the heat and simmer for 15 minutes.
