Chicken Parmesan Burgers

"I found this recipe on the Elly Says Opa! blog - and what a wonderful idea! This is constructed much like a traditional chicken parmesan, and the flavor is awesome. I hope you like!"

  • Lightly mix together first 7 ingredients for the burgers. Form into 4 patties.
  • Saute mushrooms in 2 Tablespoons butter. Season with salt and pepper.
  • Preheat broiler & spray the broiler pan with a little oil. Broil the burgers for about 4 minutes on the first side, then flip and broil for 3 minutes. Top each chicken burger with 2 tablespoons pasta sauce and a slice (or about 2T) of cheese. Place back under the broiler for 30-60 seconds, until cheese in melted and burger is cooked through. Brush buns with a little melted butter, sprinkle with Parmesan cheese and a little Italian seasoning, and place under broiler just until toasted.

  1. This recipe was easy to put together and we liked it overall. I subbed mozzarella for provolone because that is what I had on hand. Also, we grilled the burgers rather than broiling, which seemed to work out fine. Thanks for a nice weeknight meal.
