Chicken in Butter and Barbeque Sauce

ingredients

• 1 poached chicken
• barbecue sauce (see recipe, Vinegar and Tomato Barbeque Sauce)
• 15 tablespoons butter, softened
• ordinary black pepper

directions

1. Pick the chicken well and season the meat with salt, if necessary.
2. Coat with Barbeque sauce, but, do not add enough for it to become poolish.
3. Melt the butter gently in a saucepan that can accommodate all the chicken.
4. Warm the chicken meat but do not allow boiling.
5. Cover as needed.
6. Serve as part of a meal or on sandwiches.
