This is a very basic recipe that began as a way to keep from going grocery shopping for a day or two more. It's very forgiving if you have any ingredient that you are short on or have extra you are trying to get rid of. It has a good blend of flavors and is very simple.
- 1 tablespoon olive oil
- 2 garlic cloves, crushed
- 1 onion, diced
- 1 carrot, chopped fine
- 4 potatoes, diced
- 2 chicken breasts, cut into 1 inch cubes
- In a large pan heat the garlic, onions, and potatoes in olive oil over medium heat.
- When the onions begin to soften add the carrots and chicken, reduce heat and cover.
- Cook until potatoes and chicken are done.
I gave this five stars because it is so simple and easy when you're wondering what to cook in a hurry. Also it is something that everyone will eat! The only thing I did differently was to cut the carrots in chunks and added some green beans just because i like 'em.
