This is a very basic recipe that began as a way to keep from going grocery shopping for a day or two more. It's very forgiving if you have any ingredient that you are short on or have extra you are trying to get rid of. It has a good blend of flavors and is very simple.

  1. In a large pan heat the garlic, onions, and potatoes in olive oil over medium heat.
  2. When the onions begin to soften add the carrots and chicken, reduce heat and cover.
  3. Cook until potatoes and chicken are done.

I gave this five stars because it is so simple and easy when you're wondering what to cook in a hurry. Also it is something that everyone will eat! The only thing I did differently was to cut the carrots in chunks and added some green beans just because i like 'em.
