- 14.79 ml ground chia seeds (you can use whole seeds as well)
- 354.88 ml whole wheat flour
- 9.85 ml baking soda
- 2.46 ml salt
- 236.59 ml sweet potato puree (or canned pumpkin)
- 236.59 ml unsweetened applesauce
- 2 egg whites
- 118.29 ml agave syrup
- 9.85 ml lemon juice
- 4.92 ml lemon zest
- 14.79 ml vanilla extract
- 118.29 ml dried cranberries
directions
- In a large bowl, combine chia seeds, flour, baking soda, salt. Set aside.
- In a mixing bowl, combine sweet potato puree, apple sauce, egg whites, agave, lemon juice, zest, and vanilla.
- Mix dry ingredients and the cranberries into the wet mixture, just until blended.
- Pour into greased muffin tins.
- Bake at 350 degrees F. for 15 to 20 minutes.
