  • Preheat oven to 350 degrees.
  • Place muffin liners in muffin tin. Makes approximately 12 muffins.
  • In a large bowl combine the flour, baking powder, salt and sugar.
  • In a smaller bowl combine the maple syrup, milk, lemon juice and zest and the oil or applesauce.
  • Stir the wet ingredients into the dry. Fold in the Chia seeds.
  • Fill muffin tins with the batter.
  • Bake for 18 minutes.

  1. You say to put in the lemon juice and zest but there is no amount in the ingredients list. I had to guess, I put in about a tablespoon. The muffins were gross, I cooked for 20 minutes and they were still doughy on the inside. Wasted my chia seeds!
