Chele D's Quesadilla My Way--Munchie Melty Yummy-Ness

"I love these little envelopes of goo. I make these for a quick breakfast, a snack, lunch, at midnight. Any time is a good time. Yum. They are kid friendly, too. There are no measurements. It depends on how many you want, or how big your tortilla."

ingredients

  • 1 tortilla (any size, any flavor-low carb, high carb, in between, whole wheat, white, or corn!)
  • 2 ounces cheese (shredded, sliced-any type you like! I like 'em all, but mozzarella is good and melty without being g)
  • 1 pinch dehydrated-minced onion (just a pinch per. I like this for the slight crunch, the kids don't even know it's there)
  • 1 dash garlic powder (a little sprinkle)
  • 1 dash parsley (dried just for some color. They dry stuff is pretty much flavorless.)
  • 1 small pat butter or 1 small margarine per tortilla

directions

  • In a frying pan that will fit your naked tortilla, melt butter over about med heat. You want it to sizzle a little, but not get too hot.
  • When the butter is melted and sizzling, put 1 tortilla in pan, rub it around and flip. The point of this is to butter both sides.
  • Let tortilla cook until the bottom is as brown as you like. The top will begin to puff slightly.
  • Now Flip!
  • Sprinkle your cheese on one half of the tortilla, followed by dehydrated onion, garlic and parsley. Fold the naked side over.
  • Let the bottom brown to your liking and flip so the other side gets a tan and the cheese gets all melted and gooey.
  • Now make as many more as you want, and eat them up. You could serve with salsa and sourcream if you want, but I like them just as they are. Enjoy!

I am a culinary school graduate now practicing in my home kitchen. I currently teach special education. I have two beautiful girls, 18 and 10, who both drive me nuts in their own special ways ;). I LOVE to cook, but I HATE to clean up. I enjoy trying new foods. I may need to seek help for my recipe addiction. I have more recipes than I could ever use, but you never know when some obscure recipe might come in handy!
