- 1⁄2 lb sharp cheddar cheese
- 1⁄2 lb mild cheddar cheese (use block cheese from the deli, not slices or shredded) or 1/2 lb American cheese (use block cheese from the deli, not slices or shredded)
- 2 teaspoons cornstarch
- 1 tablespoon vegetable oil
- 1 lb ground beef
- kosher salt
- fresh ground black pepper
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon red pepper flakes
- 1 (10 ounce) can Rotel tomatoes & chilies
- 5 ounces evaporated milk
- 1 teaspoon frank's hot sauce (optional)
directions
- Cut cheeses into 1/2" cubes. Toss with cornstarch and set aside.
- Heat oil in a skillet over medium-high heat until shimmering. Add ground beef; saute, breaking up with a wooden spoon, until no longer pink, about 5 minutes. Season with salt, pepper, cumin and red pepper flakes. Stir until fragrant, about 30 seconds.
- Add tomatoes and milk. Bring to a boil, reduce to low and add cheese cubes. Stir constantly with a wooden spoon until cheese is melted and sauce is smooth. Stir in hot sauce, if using. Serve with crackers, vegetables and tortilla chips.
