Based on a recipe from Elizabeth Schuler’s book, German Cookery. My notes say to try Gruyere cheese or another flavorful cheese.
- Preheat oven to 425°F.
- In large bowl cream butter.
- Separate eggs.
- Add egg yolks, sour cream, grated cheese, flour, salt, and paprika. Mix well.
- Beat egg whites until stiff and fold in gently.
- Grease oven-proof custard cups and fill with mixture.
- Bake 20 to 25 minutes.
- Serve hot.
This is an exquisite and incredibly easy recipe to make. I cut the recipe in half and chose to use an old, sharp cheddar for the cheese. It is light, fluffy and very flavourful! It browned quite a bit and I removed it from the oven after 15 minutes (usually I have to cook things longer than the time listed in my oven so you may have to cook it for less time than 15 minutes). There is absolutely no doubt that I will be making this again. Made for Newest Zaar tag game. Thanks mersaydees! :)
