I've been trying to find ways to do the whole 'milk and honey' thing for a ceremony. This rocks! The honey has a wonderful tanginess that offsets the cheese wonderfully. I didn't have Ricotta on hand, and wasn't positive by what you meant by 'curd cheese' so I used some cheddar curds I had on hand. It was probably a bit different than the original recipe - but YUMMY!

  1. -----------Crust--------------.
  2. Sift the flour and salt together.
  3. Cut the chilled butter into tiny pieced and drop them into the flour.
  4. Work the butter into the flour very lightly with fingertips or a pastry blender.
  5. Gradually add just enough water to make the dough hold together in a soft ball (about 3 tbsp).
  6. Wrap the dough in plastic cling wrap and chill for 30 minutes.
  7. Heat oven to 350°F.
  8. Press the chilled dough into the bottom and sides of a 10-inch pie dish with your hands and bake for 10 minutes, COOL completely.
  9. ---------Filling--------------.
  10. Mix together the cheese, eggs,1-tsp of the cinnamon and the honey and blend well.
  11. Turn the oven up to 375°F.
  12. Pour the cheese mixture gently int the pastry shell and place in oven for 35 minutes or until the pie is firm and the top is golden.
  13. Dust the pie with the rest of the cinnamon and let it cool at least 1 hour.
