Cheddar Chicken and Rice Skillet

- 1⁄4 cup zesty Italian dressing (Calorie- Wise)
- 4 boneless skinless chicken breasts, cut into strips
- 1 1⁄2 cups instant rice, uncooked
- 1 1⁄4 cups chicken broth (25% less sodium)
- 2 cups broccoli florets (small)
- 1 1⁄2 cups tomatoes, chopped
- 1 cup double cheddar cheese, shredded (Light, made with 2% milk)
- 1⁄2 cup sliced green onion
directions
- Heat dressing in large nonstick skillet on medium-high heat. Add chicken; cook and stir 2 minutes.
- Stir in rice, broth and broccoli. Bring to a boil; cover. Reduce to low; simmer 5 minutes or until chicken is cooked through and rice is tender. let stand covered 5 minutes, or until liquid is absorbed.
- Add tomatoes, cheese and onions; stir until blended.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
