    Not-2-Sweet's Note:

    Moist flavorful seared pork chops in a spicy cream sauce. Very easy and quick to put together. Time does not include marinating time. I bought my chipotle mustard from Sam's club..love it! But you can use any flavored mustard in this dish.

    Ingredients:

    For Marinade

    • 1 cup champagne
    • 1 tablespoon minced garlic
    • 1 tablespoon steak seasoning
    • 1 tablespoon olive oil

    For Pan Sauce

    Directions:

      Put all marinade ingredients into a zip lock bag along with pork chops.
    2. 2
      Let marinate 24 hours.
    3. 3
      Heat a little olive oil in a large skillet over medium high heat.

      Add pork chops, turn down heat to medium.
    5. 5
      Cook pork chops on both sides until browned and cooked through, about 15 minutes.

      Remove pork chops from pan.

      De glaze pan with champagne.
    8. 8
      Whisk in mustard and cream.
    9. 9
      Stir in parsley.
    10. 10
      Return chops to pan to heat through.

      Tryed this and really liked it. However, I made 2 small changes... substituted deli mustard for the chipotle and yogurt for the heavy cream. I like my sauces alittle thicker so added 1 tsp cornstarch (mixed with 1 Tbsp cold water) in the last 5 minutes of cooking. Chops were very tender, juicy & full of flavor.
