A great snack or appetizer to please my fellow gorgonzola-heads. It is said to be delish with a nice glass of chilled pinot grigio, but I wouldn't know as I don't imbibe. ;o)
- 8 ounces gorgonzola
- 1⁄4 cup dry white wine
- 10 celery ribs, cleaned and cut 6-inch long
- salt & pepper
- 1⁄4 cup chopped walnuts or 1⁄4 cup almonds or 1⁄4 cup pecans
- Mix gorgonzola, nuts and wine in a bowl with wooden spoon till well blended. Taste, then add salt and pepper if needed.
- Spread into individual celery ribs and serve.
