Catalan Garbonzos

  • In a large pot, add the chickpeas and 6 cups fresh water to a boil. Lower the heat, simmer 3 hours, drain, and set aside.
  • IN A SKILLET, heat the oil over high heat. Add the garlic, bell pepper, tomatoes, nutmeg, cinnamon, thyme, salt, and black pepper. Cook, stirring 3 minutes. Lower the heat, cover, and simmer 10 minutes. Preheat oven to 325 degrees F. Place the chickpeas in a baking dish and top with the tomato mixture. Cover and bake 1 1/2 hours, stirring each half hour.
