  • rinse off tuna steaks and pat dry.
  • mix remaining ingredients in a small bowl.
  • rub tuna steaks all over with the spices, using up all of the spices and oil.
  • grill or broil the tuna steaks over highest heat until done -- approximately 3-4 minutes per side for a 2 inch thick steak.
  • note: most people overcook tuna by cooking too long on too low a temperature or by forgetting that they will continue to cook for a few minutes after they are removed from the heat.
