  1. Preheat oven to 350. Line a cookie sheet with parchment paper.
  2. Mix sugar, carrots, oil, eggs, and vanilla.
  3. Mix in flours and spices.
  4. Fold in chocolate chips. The batter will be dry.
  5. Use an ice cream scoop to make 12 cookies. Flatten into cookie shape.
  6. Bake 35-40 minutes.
