Carnival Cruise Cake

"From our honeymoon cruise with Carnival. This chocolate pudding-centered cake was a staple on the menu in 2007, but after finding the recipe online, we can make it anytime we want. My husband and I are health conscious and this cake definitely isn't, but enjoying it about once a year just takes us back... and some things are just good for the soul. As a side note, varying times and temperatures varies in turn the center of the cake, which can be pudding-like, fudge thick or, my personal preference, molten sauce."

  • 14 cup dark chocolate chips
  • 1 58 ounces butter
  • 1 egg
  • 18 cup sugar
  • 18 cup flour (plus an extra pinch or two)

directions

  • Melt chocolate and butter over low heat.
  • In mixing bowl, mix eggs and sugar, then add flour. Slowly whisk into the melted chocolate mixture.
  • Pour into greased 4-ounce ramekins.
  • Bake at 400 F for 12-14 minutes.
  • Makes one serving to share. Double or triple recipe for guests.

  1. I love Carnival's chocolate melting cake. I had only ever seen this recipe in quantities to feed 300. Thank you so much for reducing it down to one serving. I was looking for an individual sized cake to give to someone for their birthday, and this was perfect for that.

I recently graduated from college and even more recently married my life's love. So "About Me" is "About We." We always try to eat healthy, though we allow ourselves some indulgences. We avoid corn syrup, alcohol (which we dislike the taste of), and pop. I am also a notorious substitions-maker: local honey for sugar, homemade applesauce for vegetable oil, and I often entirely omit salt, meat, or anything I don't happen to have on hand. Essentially, I meddle with recipes to a fault. We are dreadfully tight with our money, befitting newlyweds, so we only go to the store every other week and have to make things stretch until then. Other info: We like to take walks, read the Bible together, travel, play board games, visit parks, read books, and cook together. I also scrapbook, and we both love cats (hence the pic).
