  • Remove the seeds and coarsely mash the Papayas.
  • Now add the lime juice, zest, cinnamon and the orange extract.
  • Fold in the sugar and flour.
  • Now beat the egg whites together until they are stiff then fold into mixture.
  • Finally, bake for at least twenty five minutes until the top is brown. Serve.
  • warm or cold.

  1. I wanted to love this recipe, but there were too many unknowns and it didn't turn out for me. Perhaps I had too much papaya as the pies never set, even after 40 minutes on 350 degrees (I guessed at the oven temp too, as that was not specified). I even used pre-made mini graham cracker crusts, so they should have been done in 40 min for sure. Sorry. Perhaps some updating of the recipe would result in a perfect pie!!! Made for ZWT5 ZINGO.
     
  2. This came out delish! We love papayas so this was right up our alley...I did add a pinch of nutmeg. There are no leftovers...too bad!! It was gone in a flash! I know it sounds weird but used a chocolate cookie crumb crust...hmmmm! Made and reviewed for Zaar Chow Hounds ZWT5.
