Caramilk Slice

"This is a recipe I invented myself when I won a hamper which contained Highlander Caramel (the same size as a can of condensed milk). Ever since I made it the first time, everyone keeps asking for it!!!"

  • 400 g canned caramel topping
  • 500 g biscuits (wine or arrowroot are best)
  • 34 cup desiccated coconut
  • 250 g butter (melted)
  • 25 g butter
  • 250 g white cooking chocolate (or Nestle Milky Bar)

  • Crush the biscuits roughly. Add the coconut.
  • Set aside approximately 1/4 c of the caramel (for the icing).
  • Mix the remaining caramel and butter through the biscuit/coconut mix. This should be a bit sticky and form into a ball easily. If not, mix a little Condensed Milk or extra melted butter through.
  • Press into a slice tin and place into the fridge.
  • Put the chocolate, caramel and butter into a bowl and melt in the microwave on low heat (I like to do it in 1 min blasts and stir so the chocolate doesn't scorch).
  • Keep heating until, when stirred briskly, the icing is smooth and glossy.
  • Spread over the base immediately and replace in the fridge. Leave to set for 1-2 hours.
  • Cut into squares and enjoy!

  2. Being a Kiwi myself and having similar recipes, this one inpaticular caught my eye, it is so similar to one that my mum makes except hers is a chocolate one which i have posted. So I knew the technique which made it easier. This was really yummy, mum and day both loved it and my friends will be the judges tomorrow, but I am sure they will love it as much as the parentals did. Thanks for posting. I live in Christchurch which is one of the three major cities in New Zealand. There is about 400,000 people who live here. I live with my partner Gavin and my puppy Blossom (hence the name!!!) We have a flatmate Julie who immigrated from America approximately 3 years ago to be the executive head chef at her mothers winery restaurant. She is an amazing chef and used to have her own cooking show on the news in the US called "Yes Chef Julie"..... she has worked with the likes of Gordon Ramsey and won numerous awards (which makes me feel completely inadequate in the kitchen) - but I really am a good cook and LOVE to cook for all my friends and family.....
