A very simple dessert to serve over vanilla ice-cream.
- 425 g pitted sweet cherries, drained
- 1 1⁄4 cups heavy cream, whipped
- 1 teaspoon sherry wine
- brown sugar
- Place cherries in ovenproof dish.
- Place cream and sherry in bowl and whip until soft peaks form.
- Pour over cherries.
- Sprinkle thickly with brown sugar.
- Cook under preheated grill for 3-4 minutes until sugar caramelises.
- Serve immediately.
