  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions without added fat or salt.
  • In a large skillet sprayed with nonstick cooking spray sauté chicken, onion, garlic, green pepper for 10-15 minutes.
  • Add zucchini, tomatoes, tomato paste and red pepper.
  • Cover and simmer 10-15 minutes, stirring frequently.
  • In a prepared 9-x 13-inch baking dish layer pasta, ricotta cheese, Canadian bacon and sauce.
  • Sprinkle with mozzarella and Parmesan cheese.
  • Bake uncovered 15-20 minutes or until cheese is melted and dish is warmed throughout.

  1. I made this last night and it was great! It tasted like lasagna and mostaccioli, with chicken and canadian bacon. It was very good! I used quite a bit of extra garlic and some extra red pepper.
     
  2. Nothing really outstanding, and the ricotta cheese I used kind of caused the sauce to turn watery after baking.
     
  3. I made this recipe as a test-run planning to make it for an engagement party. And everyone who tried it beforehand LOVED it!! So rave reviews!! I am making it again for the engagement party tonight, though I plan to put more pasta than it says, as I found there was too much sauce to the amount of pasta, but still fantastic!! Awesome recipe!!
     
  4. Made this for dinner last night with salad and parmesan bread sticks. This was really good. I did leave out the green pepper and zuchini as we don't care for them.
     
  5. WOW!!! This is a great meal. When I found the recipe I thought that the flavors would go great together, but nothing prepared me for what was to come!!! It was awesome. My four year old loved it so much, she asked if we could make it again in the morning for breakfast! That's a 5 star comment right there! I left out the red pepper flakes for my little one's sake and added some extra garlic to make up for the potential flavor loss as a result of leaving out the red pepper. It is a definate keeper. My hubby said, "Go straight to the computer and give it 5 stars!" When I make it again, and again, and again...I will add some mushrooms because we love them. Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
