Really good as is or can also be served over lettuce as a salad.
- 18 large shrimp
- 1 avocado
- 1 plum tomato
- 6 pitted kalamata olives
- 1⁄2 cup mozzarella cheese
- 2 tablespoons parmesan cheese
- balsamic vinegar
- Slice the avocado and tomato and cut the olives into quarters.
- Mix all of the ingredients together in a large bowl.
- Sprinkle with vinegar to taste and enjoy!
